Wine Description:

Strawberries, cherries and pomegranate, with subtle notes of cinnamon which add aromatic complexity. Its cool coastal origin at Paredones adds a refreshing acidity, soft tannins and an elegant long finish.

Vineyard / Estate / Viticulture:

– Soil Type: Only 6kms, in a straight line, from the Pacific Ocean, the vineyards are planted in granite soil hills with a percentage of clay, of great depth and drainage. It has evolved soil derived from granitic rocks with a high content of quartz that interact with clays and decomposing quarts rock with high depth.
– Special Vintage Info: The average maximum temperatures for the month of January do not exceed 23 o C. It is ideal for strains such as Sauvignon Blanc, Sauvignon Gris, Pinot Noir and Syrah. It produces wines of a unique fruit expression, very fresh and elegant. Paredones vineyards have pioneered the new high quality region for cold weather wines in Chile.
Vinification / Winemaking:
– How grapes were handled: 100% hand picked
– Fermentation / Yeast Type / Vessel: Grapes cooled down below 3 o C upon arrival at the winery. Hand sorting of the grapes, both before and after destemming, fermentation tanks are filled by gravity. No pumps are used in the process. Pre-fermentive maceration for 12 days between 5-7°C. Gentle alcoholic fermentation in stainless steel tanks for 15 days between 21°C – 24°C. During the first 7 days the cap was punched down by hand once a day, then increased to twice a day during the next 7 days to finally go back to once a day for the last 7 days of the fermentation.

– Ageing – barrels / size / time: 100% aged in 2 year old French oak barrels for 12 months
Tasting Notes:
Dominated by red fruits on the nose, like strawberries, cherries and pomegranate, with subtle notes of cinnamon which add aromatic complexity. Juicy and refreshing on the palate, this wine has a sweet raspberries and wild forest fruits flavours. Its cool coastal origin at Paredones adds a refreshing acidity, soft tannins and an elegant long finish.

Dominated by red fruits on the nose (strawberries, cherries and pomegranate) with subtle notes of cinnamon adding an aromatic complexity. Juicy and refreshing on the palate, with sweet raspberries and wild forest fruit flavours.

Perfect with roast duck or mushroom risotto.
